Best Salad Dressing

We have a problem. We are addicted to a certain poppy seed dressing. Someone (you know who you are) introduced us to it two years ago and it's been a staple ever since. 

Finally, I thought I may have found a suitable replacement when I came across a recipe for a creamy balsamic dressing but like most homemade salad dressings (and our poppy seed favorite), the recipe was loaded with fat (albeit "good" fat) and calories. I have been experimenting with the proportions and am happy with the result: a rich, creamy and light salad dressing.

Combine the following ingredients in a small bowl:

2 small or 1 large garlic clove grated
2 t grated (or finely minced) onion
1 T honey
2 T lemon juice
4 T low fat mayonnaise
2 t dijon mustard
3/4 t salt
1/8 t pepper

Add 1/4 c balsamic vinegar and mix well. Slowly add 1/3 c olive oil, whisking to combine. Enjoy as a dip for vegetables or on mixed greens.

  1. After a dinner discussion, I calculated the fat/calorie content of this dressing and figured it to be 4.5 g of fat and 50 calories per tablespoon. If you added water to make a thinner dressing this would be even less. Pretty impressive considering it's better than 16-grams-of-fat-per-tablespoon-dressing!
